Naan flat bread
I don’t have the time or the patience to make pizza crust from scratch, so I decided to use naan (a flat bread eaten in India and the Central Asia region) instead, and it came out rather well.
The amount of sauce and cheese to use is all of personal preference, so if you’re either a sauce or cheese lover, it’s all up to you. For this recipe, I made 2 personal sized pizzas.
Brush the naan on …

Poaching is the method of immersing food in liquid that is just below simmering. The temperature of the liquid should be around 165 – 180 degrees Fahrenheit. I love poaching Chicken drumsticks, the drawback is that it requires some time to cook. Don’t worry, your patience shall be rewarded. For this recipe, I poached the drumsticks in chicken stock. Be sure to use chicken stock and not chicken broth. I threw in carrots, celery, onions, garlic, and leeks into the …

Everyone has their own cooking style and I’ve been wondering what my style is for a long time. Many of the dishes I create have an Asian flare to them. I guess that’s because, well, I’m Asian and I grew up working in a Chinese restaurant. I don’t try to make Asian-inspired dishes, the ideas just come out of the blue and I do my best to create what I’m visualizing. A lot of my dishes are also simple …

Ichimi togarashi is a common chili pepper seasoning used in Japanese noodle and grilled dishes. I of course, was looking to use this seasoning in a non-traditional way. I mixed a teaspoon of the seasoning into breadcrumbs to add some spice to my baked chicken tenders. This recipe is simple and delicious. I’m not a fan of cooking chicken tenders and cutlets in oil, and the oven was a great alternative.
Togarashi Tenders

Do the free-range, corn-fed, and organic chickens that people pay a premium for taste any better than factory raised chickens? According to an Australian taste test, there is no difference amongst them. What I found surprising is that the food experts who participated in the taste test all agreed that chickens today aren’t as tasty as they used to be.
In the end, the method of how chickens are raised don’t determine their level of tastiness. That’s up to the cooks!
