I came across a great segment that was on the Today Show.
Did you know certain menus are designed to make you order what the restaurant wants you to order? That’s the idea behind menu engineering. The design of the menu plays a psychological role in what foods we order. Ever wonder why you sometimes never end up ordering what you intended before you stepped into the restaurant? Well, there’s a reason.
Get person to order more profitable items in addition to the entree:
- don’t use leader dots that lead to the prices
- not using dollar signs softens the prices
- super expensive items are used as decoys, so the customer picks another item that doesn’t seem as outrageously pricey
- most profitable items are located on the upper right hand side, where everybody looks at first when they first open the menu
- using mouth watering descriptions can increase profits by 30%
