Last week, I ran out of cereal and eggs for breakfast. I wasn’t about to go out to pick up fast food, or starve myself on the way to work, so I rummaged through my cabinets and found a pack of soba noodles. At first, I wasn’t familiar with the notion of having noodles for breakfast, but I believe this is the norm in some Asian countries. I’ve been eatng soba noodles for breakfast for the past week and I noticed that along with a cup of yogurt, it keeps me well satiated and my second breakfast is now into a mid-morning snack.
I prefer the Hakubaku brand of organic soba. Each 3.1 oz serving contains about 12 grams of protein, 3 grams of fiber, and a negligible amount of sodium. When paired with a cup of yogurt, I can provide my body with 20 grams of protein first thing in the morning. Not bad at all.
