Ingredients:
10 whole chicken wings
1/2 cup of tamari soy sauce
1/4 cup of canola oil
1/2 cup of light brown sugar
1 tablespoon of Tabasco Sauce
5 garlic cloves
1 shallot
1 medium-sized red onion
2 teaspoons of ginger juice
1 tablespoon of black pepper

Combine the soy sauce, canola oil, and Tabasco Sauce in a bowl and mix well. Add the brown sugar and mix until it is dissolved. Take a taste to see if it is too salty, if so, add more brown sugar to balance out the flavor. Finely chop up the onion and shallot, finely mince the garlic and place into the large bowl. Mince the ginger and squeeze two teaspoons worth of ginger juice into the bowl. Mix all ingredients thoroughly.

Add the chicken wings into the bowl and cover liberally with the marinade. Refridgerate overnight. If you can’t cover all the wings, just give them a toss from time to time.
Preheat the oven to 400 degrees for ten minutes. Spray a baking sheet or pan with cooking spray to prevent sticking. Place the chicken on the pan and make sure the pieces aren’t touching each other. Give the chicken a light coating of cooking spray, this gives the chicken a glistening sheen when it comes out of the oven. Bake from 35 to 40 minutes. Remove from oven and let stand for 5 minutes. Transfer to a plate and garnish with whatever you want (lemon, parsley stalks, sesame seeds, etc).

As always, please make sure the food is thoroughly cooked before it is consumed.
