It was four years ago when I first encountered Challah French toast. I was working at an offsite location over the weekend and I was waiting for breakfast to arrive. The breakfast was served buffet style, and when it was all setup, I quickly noticed these huge golden yellow chunks at the end of the table. It was the Challah French Toast. I had never seen or eaten anything like it before. It was delicious and it gave one of those euphoric feelings of bliss after a good meal. You know, it’s when you end up slouching on the chair, tapping your belly and grinning with satisfaction. Sadly, I haven’t been eating Challah French Toast ever since I eliminated white bread products out of my diet. Alas, Whole Foods has come to my rescue once again. They were selling Whole Wheat Challah Bread! I snatched two loaves and made my merry way home. Here’s a plain and simple recipe.

Ingredients

  • 5 1-inch Slices of Whole Wheat Challah Bread
  • 1/4 cup of whole milk
  • 1 tbsp of light brown sugar
  • 1/4 tsp of vanilla extract
  • 2 large eggs
  • 1 tbsp of butter

Beat the eggs until frothy, add the milk, brown sugar, and vanilla extract into the eggs and beat until the sugar is completely dissolved. Heat up a nonstick pan to medium heat. Coat the pan with the butter. Dip each slice of bread into the egg mix, coating evenly. Place it in the pan and cook each side for 2 - 3 minutes or until done. Repeat for the rest of the slices. To make things even more nutritious, I used Eggland’s Best eggs, and replaced the butter with Smart Balance buttery spread. Ah yes, Omega-3 goodness.

Top with powdered sugar or maple syrup, or both.
