Up until about four months ago, the thought of eating a carrot would make me cringe. I never liked eating the Bugs Bunny-sponsored vegetable as a kid, and that went on well through my adult years. Now, I’ve been eating two to three a day because I’ve somehow miraculously acquired a taste for them. I haven’t turned orange yet, but I’m close to it. My obsession has gone as far as bringing carrots and a vegetable peeler to the office. Apparently, peeling carrots over your office wastebasket warrants a lot of weird stares and a “WTF are you doing, are you serious?”
Carrots contain high amounts of antioxidant compounds and pro-vitamin A carotenes, which has been found to help protect against cancer and cardiovascular disease. It’s also known to promote eye health and night vision.
