Soy sauce chicken is one of my favorite dishes from Chinatown. I don’t go out there too often anymore so I had to come up with my own version. Here’s the basic recipe to get you started.
Soy Sauce Sake Chicken Drumsticks
Ingredients
- 4 chicken drumsticks
- 2 cups of low-cost sake
- 1 cup of Tamari
- 3/4 cup of brown sugar
Pour the sake into a 1.5 quart pot and let it simmer for about 15 minutes to burn off the alcohol. You want to cook the chicken so it picks up the essence of the rice wine, and not the alcohol. Reduce the heat to low and add the soy sauce and brown sugar. Stir well. When the temperature of the liquid falls into the range of 165 to 175 degrees Fahrenheit, submerge the drumsticks into the solution and let them poach for at least half an hour. Make sure the chicken is cooked all the way through before you eat it. The juices from the chicken should run clear.
The soy sauce mixture can be jazzed up with green onions, garlic, and other fixings. Just throw in the extras while the chicken is cooking to get some extra flavor. Sprinkling sesame seeds over the chicken adds a nice touch as well.
Don’t throw the mixture away afterwards, it can be used for a few more times. The more it’s used, the tastier it gets! Store it in a container and place it in the freezer until it’s ready to be used again.
