Naturally, Ikea is associated with furniture. Not just any ordinary furniture but affordable and chic furniture that have the ability to transform your dull and mundane living space into the designs typically found in Home & Design magazine. Ikea also provides eager shoppers with some savory and delicious food such as their famous Swedish meatballs. My favorites are neither the meatballs, nor the shrimp sandwich, but their Lingonberry preserves!

I purchased a jar of Lingonsylt - Lingonberry preserves, along with the office chair which I bought from Ikea in Westbury, Long Island NY. The preserves cost $3.29.

Tonight’s post is about my experimental dish - LingonBerry Peary Pork. Main ingredients consist of pork and lingonberry preserves. The cut of pork used was from the butt and I sliced it thinly. I used about 1 lb of pork. I marinated the pork with 2 tablespoons of lingonberry preserves, 1 teaspoon of cinnamon sugar, 1 tablespoon honey, 1 tablespoon of coconut rum, dry thyme leaves, and orange juice. The acid from the orange juice will help tenderize the meat.

I let the pork marinate in the fridge overnight, just to allow all the flavors to seep in. Remember to cover your meat with plastic wrap to seal in the moisture.

Preheat the oven to 350 degrees Fahrenheit and bake the pork in the oven for 20-25 minutes. Once the surface achieves a brownish hue, the pork is ready to be served. I prepared some European pear slices for decoration and topped it with Lingonberry preserves.

  • 1 lb of Pork Butt
  • 1 teaspoon of cinnamon sugar
  • 2 tablespoons of lingonberry preserves
  • 1 tablespoon of honey
  • 1 tablespoon of coconut rum
  • dry thyme leaves
  • Sliced pear and Lingonberry preserves for decoration.
