The sweet potato, or the yam as some call it, is often overlooked until the Thanksgiving season. If you’re looking to snack smart, try making baked sweet potato wedges. This vegetable is packed with vitamins and is a great alternative to eating potatoes as it ranks on the lower spectrum of the glycemic scale.
Baked Sweet Potato Wedges
Ingredients
- 2 - Sweet potatoes
- 2 - Teaspoons of oil
- Salt
- Pepper
Cut the potatoes into wedges, this can vary depending on the size of the sweet potato. Make sure you use a strong and sturdy knife for this, be careful and watch your fingers. I got about 6-8 wedges out of one sweet potato. Place the wedges into a bowl, add the oil, a few dashes of ground black pepper, and a few pinches of salt. Toss the ingredients together.
Preheat the oven to 400 degrees Fahrenheit. Prepare a oven safe tray and line it with aluminum foil and spray it with non-stick cooking spray. Transfer the wedges to the tray, leaving space between the wedges. Place it in the oven and bake for twenty minutes. Let the sweet potatoes settle for about five minutes before consumption.
