Delicious either chilled or served with broth, soba noodles are great to eat at any time of the year. However, not all soba noodles are created equal. Even though the noodles are made from buckwheat flour, depending on the manufacturer, the sodium content can vary greatly. So the next time you put that bag of noodles in your shopping cart, remember to read the nutrition facts label for the sodium content. Hint, go for the one with less sodium.
