There’s about six inches of snow outside right now. I had no idea it was supposed to snow today. I woke up at 6AM, looked out the window, and like a kid hoping for a snow day, ran to my laptop to check my work email. Our senior manager sent out an e-mail telling us to stay home. Snow day! I do have to do some work though, so it’s not a free day what-so-ever. It sure beats commuting.
The fluffy flakes of snow reminded me of shaved coconut meat, so I killed some time in the early morning by making some coconut mint jellies. The first two batches were disastrous as gelatin isn’t easy to work with or to control, but I think I got the hang of it. To me, one of the best things about cooking is going through the trial and error process.
I don’t have the recipe written down yet as I’m struggling to write down how to control the use of the gelatin.
